Kerala Style Special Ela Ada
Ela Ada is a traditional Kerala delicacy made with rice flour, jaggery, and coconut, steamed in banana leaves. For the filling, mix grated coconut with melted jaggery, a pinch of cardamom powder, and chopped banana or jackfruit if desired. Prepare a soft dough using roasted rice flour and warm water with a pinch of salt. Spread the dough thinly on a cleaned banana leaf, place a spoonful of filling, fold it, and seal the edges. Steam the ada in an idli steamer or appachembu for 10–15 minutes. The aroma of banana leaves adds a special flavor. Serve warm.
